Yeast Rehydration With GO-FERM STEROL FLASH™

Applies to: wineries using GO-FERM STEROL FLASH™ for rehydration of Saccharomyces yeast. This protocol is not appropriate for rehydrating yeast with other GO-FERM nutrients (click here) or for rehydrating non-Saccharomyces yeast (click here). 

Protocol

GO-FERM STEROL FLASH™ was specifically developed to eliminate the need for warm water rehydration and acclimatization steps. This protocol is not appropriate for rehydrating yeast with other GO-FERM nutrients ( click here) or for rehydrating non-Saccharomyces yeast (click here).

PREPARE REHYDRATION NUTRIENT:

step 1: Suspend 30 g/hL (2.5 lb/1000 gal) of GO-FERM STEROL FLASH in 10 times its weight of clean, chlorine-free, water (>15°C/59°F).

REHYDRATE YEAST:

step 2: Add 25 g/hL (2 lb/1000 gal) of active dried yeast

step 3: Stir gently to break up any clumps and let suspension stand for 15 minutes. Foaming is not an indicator of yeast viability.
Do not let yeast stand in rehydration water longer than 30 minutes without inoculating or yeast viability will decline.

INOCULATE:

step 4: Add yeast slurry from step 3 directly into juice or must and mix.

For large tanks with long filling times add the yeast slurry to the bottom of the fermentation vessel just as you begin filling with must/juice. 
This allows the yeast a head start over indigenous 
organisms.
