Description

Robust and fruity yeast for red wines

SL90 was selected for its ability to increase red fruit characters and complexity in red wines.
  • Aromatically intense with good mouthfeel due to well-balanced esters and higher alcohols
  • Known to enhance berry aromas in Cabernet Franc, Grenache and Merlot, plum aromas are enhanced in Sangiovese and Zinfandel, whereas Cabernet Sauvignon is jammy with good tannin profile
  • Can minimize green, herbaceous, characters
  • Quickly dominates the must and overcomes VA producing yeast and bacteria
  • Saccharomyces cerevisiae bayanus
  • Isolated from the Valencia region of Spain
Frequently used in: Cabernet Sauvignon, Cabernet Franc, Grenache, Merlot, Zinfandel, Sangiovese, fruitforward reds
Alcohol Tolerance: 16%
