Vitilevure M83 is particularly well-adapted for rosé winemaking in warmer regions. It has good implantation capacity, strong fermentation kinetics, moderate nutrient demands and an alcohol tolerance up to 15% (v/v).
- Selected by the Laboratoire Aubanelle in the Bandol appellation of Provence
- Produces round and balanced rosés with enhanced fruit aromas and more stable color due to it polyphenol reactive polsaccharides.
- Optimal conditions for fermentation are temperatures between 17-28°C (63-82°F).
