Fining Agents
For all of the products used, protocols should be carefully followed for trials, preparation and use. The extent of fining can make a difference as to how much filtration will be necessary and can affect a wine’s body, aroma, flavor and color.
Always prepare fining agents in water (not wine or diluted wine). Addition by pumping using the venturi effect is a very efficient way of dispersal. The Mazzei Injector is a particularly effective tool for this purpose. Closed circulation after addition is also beneficial.Consult the manufacturer’s recommendation prior to use.
Dosage for all fining, clarifying and stabilizing agents should be determined by laboratory bench trials.
